Much like its name suggests, the meals here are forged through fire. With an awe-inspiring open-plan kitchen, guests can enjoy the food with their eyes and noses before it reaches their tables. After many years of working in Michelin Star restaurants chef and owner Lennox Hastie decided to take his culinary experience and refine it – working with Victor Arguinzoniz at Asador Etxebarri for 5 years before opening Firedoor. The heat of the cooking process is one that matches his passion for the grill: he is fascinated by the change that fresh, natural ingredients undergo when they meet with fire. Lennox was pivotal in the success of Etxebarri by elevating Victor’s traditional fire cooking to world-class dining, even earning a Michelin star in 2010, which was unheard of for an asador back in those days. Lennox’s Netflix episode in Chef’s Table: BBQ and his book Finding Fire are definitely not-to-be-missed.
